Peach Lassi Sorbet with Crushed Blackberries
Take advantage of our delicious Colorado peach season. Don’t skip the vodka- it will give the sorbet a smoother, less icy texture.
4- medium peeled, chopped peaches
½ cup plain whole milk Greek yogurt
2 TBSP Vodka ¼ tsp. kosher salt
¼ cup plus 2TBSP honey
6 oz.- fresh halved blackberries
2 tsp. fresh lemon juice
Process peaches, yogurt, vodka, salt, and ¼ cup of honey in blender or food processor until smooth. Pour peach mixture into a metal loaf pan and place a piece of parchment paper on top, pressing directly onto surface. Freeze until firm, about 6 hours.
Shortly before serving, lightly crush half of the blackberries in a small bowl. Add lemon juice and the remaining honey and let it sit, tossing occasionally. Thaw sorbet 30 minutes before scooping into bowls and top with macerated
blackberries. Makes 4 servings.
Kas’s Coin-style Fresh Pressed Margarita
2 oz. Casamigos Reposado Tequila 1oz. Cointreau Orange Liqueur
1 oz fresh squeezed lime juice
Shake and strain over ice. Garnish with a lime wheel and salted rim.
