Guinness Chocolate Mousse
We got this recipe in Ireland at the brewery. Ideal for your Valentine.
10 egg yolks 10 egg whites, whisked
12 oz. dark chocolate ¼ lb. butter
¾ cup superfine sugar ½ cup Guinness draught
Melt chocolate and butter in a double boiler, and then add in the Guinness. Beat egg yolks and sugar until light and fluffy. Mix in the melted chocolate mixture in with the egg yolks and slowly fold in the whisked egg whites until everything is smooth. Transfer mousse in serving glasses and chill. Serves 6. Hint*- serve with fresh raspberries or other seasonal berries.
