Bourbon-Glazed Ham

Ideal for Spring entertaining

½ cup fresh apple juice

1 ¾ cup packed brown sugar

3TBSP dry mustard

¼ cup bourbon

1 cup finely ground toasted pecans

¼ cup mild, light molasses

1- 16 to18 lb. bone-in ham

Boil juiced and bourbon is a saucepan until reduced to 1/3 cup ( about 6 minutes). Mix sugar, pecans, molasses, and mustard in a bowl. Add bourbon mixture and stir to form a paste. Line large roasting pan with heavy foil, leaving over-hang on all sides. Trim off skin and all but ¼ inch fat from ham. Place ham, fat side up, and roast at 325 until internal temperature reaches 130-135. ( about 10 minutes per pound). Remove ham from oven, and increase temperature to 425. Lightly score fat on ham into a diamond pattern. Rub glaze thickly over top and sides of ham. Return ham to oven and bake until glaze is deep brown and bubbling. (about 25 minutes)Let stand for at least 20 minutes and serve. Makes 12 servings.
