A blend of Frantoio, Moraiolo, Leccino olives. Trees average 80 years in age and are grown on the west­ern grade of Tuscany between Pisa and Siena. Very fresh with gorgeous gold-green color with aromas of pine, grass, green olives and fresh lettuce. Giorgio Rivetti holds nothing back, this is a luscious olive oil.

A single variety oil, made from 100% Arbequina olives. This oil is yellow gold in color with a tinge of green. Its primary fragrances of tomato vines, and hints of fresh cut spring grass, and subtle hints of green apple. It flows smoothly through the palate, with a nutty flavor, a hint of bitterness and pleasant peppery finish. An elegant expression to enjoy.
Cordoba, Andalusia
La Cultivada is an incredibly high quality, artisanal farm that produces the greatest Hojiblanca we’ve ever had. Located near Cordoba in the shadows of the Sierra Morena Mountains in Andalusia, La Cultivada is the passion of Pedro Vecino Riera. In 1990 Pedro set a new course for the estate dedicated only to high quality through expressive and fresh olive oils. The farm is blessed with a near perfect combination of Mediterranean summers and mountain influenced winters making a special place for Hojiblanca to thrive. While olives have been cultivated and oil produced here since Roman times it really has been only in the last 20 years that a dedicated handful of producers have started a revolution in quality over quantity and the results are astonishing.
La Cultivada olive oils are produced from early harvested olives that are pressed in less than a 2 hours to lock in freshness at its peak. The cool, soft extraction yields oil with gorgeous apple fruit to balance the delicious grassy notes. It’s an incredible feat in olive oil production. It has a beautiful yellow gold color with bright green edges, it’s medium bodied with aromas of freshly cut grass, apple and celery. Bitterness and spiciness are low. On the pallet this oil is so fresh that there isn’t an oily texture, it disappears and you are left with delicious green grass, apple and olive flavors. It can be used on everything in the kitchen but would excel in vegetable soups, fresh grilled bread with tomatoes, fish, raw oysters, vegetable pastas and mushroom risotto. It’s packaged in a beautiful gold tin for maximum preservation of freshness and the label is original artwork from the Spanish artist Pedro Mora. Available in the US market for the first time.
Moulin des Ombres   
“Mill of Shadows” is produced by Jean Rene de Fleurieu. The olive pro­duction was transformed in to a very high quality operation in 1996 but this mill is part of the long standing Chateau Montfrin dating back to the 1600’s. Perched above the Rhone river valley about 20km west of Avignon. A rich blend of traditional varieties is the key to this oils complexity and flavor. Callan and Petit Ribiers are a few. The oils are very fresh and have both French and Italian taste. The French varieties offer up lots of green tomato, olive and banana flavors but Jean is looking to very early harvests with a high percentage of green olives that of­fer up more firm oils with more fresh green vegetable elements.
Further testament to the high quality standards is the fact the entire farm has been certified organic since 2000.

To start off this week’s tasting we have the wonderful Moet and Chandon Imperial Brut. Golden straw color with highlights of green, this champagne is a beauty. The nose is vibrant and full with aromas of green apple and citrus, followed by minerality and warm bready notes. On the palate, the wine starts with citrus and white fruits complimented by fine bubbles, before finishing crisply with a hint of nutty flavors. The perfect wine to celebrate the Holidays with, don’t miss your chance to try is beautiful bottle of Champagne!

Second up for the night we have Domaine Jean Pascal’s Puligny Montrachet. One of the best examples of what Chardonnay from France can taste like, this wine is sure to “wow” just about anyone. After spending time on its lees in French Oak, this wine is clean and intense with spiced-apple fruit notes to start, balanced by touches of toffee. The finish is focused, with a beautifully creamy mouthfeel that sticks with you and leaves you wanting more. Another excellent wine, this is, yet again, a wine you won’t want to miss trying while we have it open!

Blackbird “Arise” Red Blend(1.5L)– Reg. $149.99 SALE $119.99

Third up for the night we have the “Arise” Red Blend, from Blackbird Vineyards. This awesome wine is a blend of Merlot, Cabernet Franc, Cabernet Sauvignon and Petit Verdot. On the nose, the wine has dense aromas of blackberries, current, clove and an earthy note of something like “forest floor.” On the palate the wine is full of black cherry, dark fig and a touch of tobacco and spice. The finish is long and lingering, complimented by smooth, but very present, tannins and good density. The third wine in a tasting not to be missed, come give this wine a try!
Blason D’Issan Margaux- Reg. $41.99 SALE $36.99
Last up for the evening we the Blason D’Issan Margaux, from Bordeaux, France. A classic blend of Cabernet Sauvignon and Merlot (60/40) this is a great bottle to end the tasting on. On the nose, this wine is full of red berry fruit, framed by spicy and rich earth notes. On the palate the wine is on the heavy side of medium-bodied, with dark fruit flavors along side some hints of chocolate and mocha. The wine is well structured, with crisp tannins and a touch of tobacco on the dry and grippy finish. A great way to wrap up a tasting, don’t miss out on this bottle, or any of the others!
