Feature: Marble Distilling

Fall is in the air and we are right on the heels of the booziest of holidays. We drink
during the holidays with our loved ones and family to laugh and reminisce, or maybe we drink because of them. Whatever the reason we are drinking, we should be drinking some of Colorado’s exceptional craft spirits. Marble Distilling opened in June of 2015 in Carbondale, Colorado; it is one of the coolest and most unique distilleries in the whole state. Marble distillery is not just a distillery it is also an Inn, in fact it’s the first ever Inn to be housed in a Distillery. Marble distillery is a pioneer of sustainable distilling. Their motto “Drink Sustainably” is the core of their business. Their distillery uses many of the byproducts of the distillation process as a source of energy and to give back to the community.

Distilleries use millions of gallons of water to cool, process, and convert hot vapor into a liquid “Spirit”. Marble recaptures 100% of its process water and reuses energy harvested from the distillation process to heat and cool the distillery and Inn, saving more than 4 million gallons of water a year and enough energy to heat 20 homes. All of the rains marble uses are sourced locally and all stillage from the distillery is sent to local Carbondale ranchers. Not only has Marble Distilling Co. invested in the future of our planet they also make some remarkable spirits. Marble makes a one of kind vodka, a delightful coffee liqueur, a luxurious Gingercello and a limited supply of a bourbon barrel aged Gingercello with plans to make a whiskey in the near future. Marble Vodka is a unique blend of all-natural Colorado grown wheat and malted barley. It is the only vodka filtered through crushed yule marble giving it a soft and creamy nose with a brilliantly smooth finish.

Marble’s coffee liqueur, “Moonlight Express” is made from an old family recipe. It is a complex blend of dark coffee beans and Ugandan vanilla beans. This dark roasted coffee liqueur has a smoky yet creamy finish with the perfect touch of sweetness. The Gingercello is truly unique, a modern adaptation of the Italian classic. Using their copper pot still, vodka is infused with fresh cut ginger and only the sweetest part of hand zested lemons. It is then lightly sweetened with pure beet sugar. All of this makes for an overwhelmingly refreshing spirit. Just when you thought the Gingercello couldn’t get any better someone decided to put it in bourbon barrels and let it sit; what came out was a more sophisticated spirit- warm and spicy and light and fruity what’s not to like?
